This Pineapple Dream is one of those recipes that’s been floating around for years. It’s a light, fluffy dessert of crushed pineapple, cream cheese, and whipped topping, all sandwiched between layers of a delicious graham cracker crust.
Ingredients
2½ cups graham cracker crumbs
1/2 cup unsalted butter
2 cup sift powder sugar
1/2 cup unsalted butter
1/2 cup cream cheese
250 mL Cool Whip whipped cream
2½ cups crushed pineapple chunks
Preparation
Preheat oven 300°F (148°C). Melt the butter and let cool. Combine graham cracker crumbs and butter. Mix until well incorporated. Press 2 cups of this mixture into the bottom of a 9×9 square baking dish. Cook for 8 to 10 minutes. With your mixer, beat the cream cheese and butter together until creamy. Then, add the powdered sugar on low speed (1 cup at a time), mixing until well blended .
Mix well with your mixer on high speed for 1 minute. Add a tablespoon of pineapple to the mixture and spread over the crust, leveling with a spatula.
